HORS D’OEUVRES

The following delicious hors d’oeuvres will be passed around during cocktail hour. No choice is necessary for these options.

 

Caprese Brochette

Cantonese Style Vegetable Spring Rolls

Potato Blinis with Olive Tapenade

Beef Brochette with Teriyaki Glaze

Double Smoked Bacon and Mushroom Ragout on Savoury Short Bread

STARTERS

Each dinner includes dinner rolls and a trio of flavoured butter, as well as the following soup and salad.

 

Butternut Squash Soup with Pumpkin Seed Pesto

Puree of honey roasted Butternut Squash and Double Cream garnished with a pumpkin seed pesto.

 

Pear and Goat Cheese Salad

Spring greens, poached bosc pears, crumbled goat cheese and candied walnuts. Served with a red wine vinaigrette.

MAINS

Please select one of the following options. Each dinner includes Rolls, a trio of Flavoured Butter, Soup, Salad, Dessert, Coffee, and Tea Service.


1) Grilled Vegetable Tower

Layered Risotto, Eggplant, Onion, Portobello, Roasted Red Pepper, Yellow Zucchini and Spinach with a Tomato Basil Coulis on a Bed of Quinoa Pilaff.


2) Manhattan Glazed Chicken Supreme

with an Orange Bourbon Emulsion, Glazed Baby Stem on Carrot, Caramelized Onion, and Spinach Potato Rosti. Served with Vermouth Sour Cherry Jus.


3) Braised Short Ribs

with Garlic Whipped Potato and French Beans. Served with a Red Wine Jus.

DESSERT

Each dinner includes the following dessert.
